The owners of Fredo's Trattoria are Jose Espitia and his father, Alfredo. Jose's brother Danny Espitia runs the family's other restaurant, Alfredo's Italian Kitchen and Pizzeria, located in Terrell. Alfredo's childhood friend, Jose Sanchez, is a partner in the businesses. Jose Espitia says, “Our restaurants are family owned and ran. My father is the Chef mastermind behind our great food. He makes sure our food quality at both places stays where it needs to be.” Judging by my own experiences at Fredo's, the food has exceeded my expectations, so Alfredo Espitia seems to be very good at his job.
Jose Espitia moved to Forney in 2008, and though they started their Terrell business in 2010, he always had an eye on opening a restaurant in Forney. Jose says, “I have been wanting to bring our food to Forney for a long time, and we finally found an opportunity with this spot.” When asked why he wanted a restaurant in Forney, Jose replied, “We love that Forney is growing, we love the people here in Forney. I live here so I have a lot of friends here. This is just the right place for us and we are happy to be here.”
The Espitia family uses authentic recipes and fresh ingredients to make their food unique and delicious. They make their sauces and ingredients fresh before every shift and close for 90 minutes every day to get restocked for dinner time. They are open seven days a week, so if they look like they are working hard, it's because they are.
Though the interior of Fredo's is small, it is enough to seat 40 people. It is tastefully decorated and the tables are set up to make good use of the space without making customers feel crowded. You can expect their focaccia bread and red sauce as a free appetizer before your meal. The bread is warm and tasty, just don't fill up on it before you get to your main course. One of the most mouthwatering meals on the menu is the Penne Pasta Arcelia. The dish is a mix of chicken, mushrooms, pesto cream sauce, and penne pasta, and you can get a full or half order of it, depending on how hungry you are. The Fettucini Alfredo has just the right amount of creamy sauce, and Fredo's pizzas are perfect for a family meal.
If you are a fish lover, try the grilled salmon on a lobster cream sauce. It comes with mashed potatoes and vegetables and costs just under $16. They also serve grilled shrimp, grilled rib-eye, and grilled pork chop. There are plenty of chicken dishes to choose from as well. Nothing that I have tried at Fredo's has disappointed me. The only thing I would change is for Fredo's to serve beer and wine. They do not have their alcohol license yet, but you are welcome to bring your own beer or wine with you.
Fredo's Italian Trattoria prices range from $7-9 for appetizers, $5-11 for soups and salads, and $7-16 for main course meals. They offer lunch specials Monday – Friday from 11am to 3pm, which includes a full meal with soup or salad and a drink for only $7.
